This was my first time cooking rice in my rice cooker. I’ve had it almost 2 years so that might be considered… insane? Maybe. I’m okay with that; I got it for quinoa and I just make rice so rarely. I make rice rarely for the same reason that I had nori paper sitting in the cupboard for 5 years: Because I am incapable of cooking rice. I couldn’t believe how easy it was in my rice cooker! I knew it “should be” easy, but rice is “supposed to be” easy to cook in the first place isn’t it?

So this was more like a not-meat blob of some sorts. It totally fell apart when I took it out of the glass dish… I made two of the same size and it was really, really good. It didn’t taste like the meat loaf that I remember but it has been quite a long time since I’ve had meat of any sorts so who am I to say that? My mom said it didn’t taste the same either, but don’t fret! We both agreed it was super tasty!

Oh man… This was so tasty! I used Char’s recipe… I also used almond butter instead of peanut butter. I also doubled the amount of peanut (almond) sauce and used half a package of tofu instead of a third. I might have gotten carried away. As you can see, that tortilla is slightly overfilled lol.

How was everyone’s (Canadian) Thanksgiving weekend? Mine was fantastic if I do say so myself. We had to close work early on Sunday (and when I say early I mean at 9 in the morning) so I only worked a half-day, thus giving me lots more time to make dinner than I was expecting.

My pizza had spinach, herbs de province, garlic powder, veggie pepperoni, and mozarella-style Daiya shreds on it. I kept it pretty simple, and that’s usually the way I like it.

Originally I was wanting something Mexican for dinner today, but as I perused recipes between the two non-dessert cookbooks my idea of what I wanted migrated to burgers. Spicy, spicy burgers. I was going to make ‘spicy black bean burgers’, but on the very next page of Vegan A Go-Go was a recipe for ‘Lentil Burgers’. I’d never had lentils before to be honest so I didn’t really know what to expect, but oh man these were good!
