I also doubled the amount of peanut (almond) sauce and used half a package of tofu instead of a third. I might have gotten carried away. As you can see, that tortilla is slightly overfilled lol. Almost half of it fell out and I got another out of it. I’d say this recipe is enough for 4, personally, but that’s just me. icon smile Cupcakes and Crispy Tofu Peanut Wrap The tortilla is of the “ancient grains” variety. What does that even mean? Ancient grains? I’m pretty sure all grains that we consume are ancient. Well I already said these were amazing. I don’t cook tofu very often but this recipe will definitely be repeated soon!

I had to make some slight modifications such as replacing the nondairy yogurt because I don’t have any. Actually, I’ve never had nondairy yogurt, is it good? I love coconut ice cream; I wonder if it’s possible to make a coconut-based yogurt? halloween robot 217x300 Cupcakes and Crispy Tofu Peanut WrapIn all honesty the frosting was okay but I didn’t love it. It tasted really kind of weird to be honest. A coworker I brought a cupcake for said the frosting tasted like my smoothies, and I could see it. I used almond butter in it and I think it would have been a lot better with cashew or peanut butter. I’ve just been trying to use up my almond butter lately. I’ve had a jar of it in the fridge for weeks? Months? Maybe. It needs consuming. I love almonds but almond butter is not a favorite of mine. (No I don’t put almond butter in my smoothies lol I’m not really sure why it tasted similar.)

I’ll post recipes for these cupcakes (or you can just follow Katie’s, if you have nondairy yogurt) and for the wraps tomorrow. I would tonight but… I’m tired, so there! icon razz Cupcakes and Crispy Tofu Peanut Wrap

How was everyone’s Halloween? Mine was okay. I didn’t go out or anything. I dressed up for work but went home after and just ate munchies and worked on some schoolwork. It was nice and relaxing, and strangely enough, there wasn’t a single trick-or-treater. I’m okay with that because it means more chips for me. icon smile Cupcakes and Crispy Tofu Peanut Wrap

To be honest, though, I never even carved a pumpkin this year. Carving a pumpkin is the only thing I usually do at Halloween. This was the first time in years that I dressed up and I did have fun… Perhaps next year I’ll dress up and go out!

But I digress… I’m tired and I’m going to bed now! Goodnight lovelies! <3
